Opening a brick and mortar business during a pandemic isn’t easy, but that’s exactly what Joseph Edwards did. “We were to open up our store several months prior, but due to Covid, obviously, there were lots of delays and challenges,” says Edwards, who opened Cookies N’ Cream, a cookie and ice cream shop, in Bronxville, NY, in June. But the community welcomed them with open arms. The shop sells 15 different types of oversized cookies, offers local Longford’s ice cream and has a cereal bar. (You can choose to blend a cereal into your ice cream.) Two favorites are the outrageous chocolate chip cookie and vanilla ice cream infused with Cookie Crisp cereal.
