Upon completing his culinary training, Chef Rui Correia went on to work at some of the best known kitchens in New York City: Union Square Cafe with Chef Michael Romano and acclaimed restauranteur and hospitality guru, Danny Meyer, Gramercy Tavern with Tom Colicchio, Mesa Grill with Bobby Flay and Gotham Bar & Grill with Alfred Portale.

In the fall of 2009, he began to showcase his native Portuguese cuisine by opening DOURO Restaurant in Greenwich, CT. DOURO is named after the region where he was born, and features a new world menu from an old world cuisine. Due to his representation of such an unfamiliar cuisine and country, he has been recognized in local, national and international publications (New York Times, Greenwich Magazine, Serendipity Magazine, WAG). As well as in television broadcasts including: New England Living TV, Better TV, RTP Portugal, and has been a regular on NBC’s TODAY Show. His Portuguese background and cuisine is applied to everything he does in his kitchen and lifestyle. Rui is becoming a leader and ambassador for Portuguese wines, food, culture and travel.
