What to Do & Where to Stay: Head to the Kimpton Taconic: this summer, the resort kicks off their first adults-only Camp Taconic. The  itinerary includes backcountry hiking, trips to hidden swimming holes, photography expeditions, glass blowing classes and BBQ  lessons with Vermont pit master and chef Adam Raftery. There’s mid-day picnic lunches, as well as scotch and s’mores by the  campfire and sing-alongs.
