This 84-room, sustainably-built and operated property is just half a mile from Historic Taos Plaza, but thanks to 11 acres of landscaped grounds replete with waterfalls, soaring trees and meditation areas, the hotel feels a world away. Days start early here, with adventures like river rafting or llama trekking through the Sagre de Cristo Mountains, followed by a trip to the Living Spa, which incorporates ancient rituals of local Native American healers into its treatments. Adobe guest cottages have private balconies and gas fireplaces, and are made from recycled materials. Rainwater is collected to reduce water use and compost is used as fertilizer. At De La Tierra restaurant, executive chef Ray Naranjo combines modern Native American and American cuisine in dishes like New Mexico red chile and Pueblo style buffalo posale.
