Fresh-off-the-boat oysters on the half shell used to be hard to find outside of a restaurant. But fourth-generation oystering company Copps Island Oyster Shack at Brown’s Marina in Stratford, CT, makes it possible for us to have direct access to locally and sustainably harvested shellfish without harming the Long Island Sound. “We wanted our customers to have a direct-to-consumer experience and offer the freshest, locally and sustainably cultivated shellfish,” says Jimmy Bloom, who now runs the family business with his sister Jeanne. Their traditional oystering methods have not only preserved the oyster population on the sound but also improved it in the last 150 years. Look for their new Oysterman’s Daughter retail store coming to Brown’s Marina, and a second Oyster Shack location in Branford, CT, this year.
