Christian Petroni’s Sweet Potato Recipe

Sweet Potato Bites

5-6 sweet potatoes
Dark brown sugar
Sea salt
Freshly ground black pepper
Store bought pancake syrup

  1. Evenly place sweet potatoes in a pot of salted water; bring to a boil; do not crowd the pot or stack (important not to overcool, keeping the potatoes firm).
  2. Once cool remove skin and cut into ½-inch coins.
  3. Place evenly on a lined sheet pan. Sprinkle with a copious amount of dark brown sugar.
  4. Add a tab of butter to each sliced potato (at least half a teaspoon). Season with sea salt and fresh cracked black pepper.
  5. Drizzle with store bought pancake syrup.
  6. Roast in a 375˚F oven until the edges get crispy and caramelized. Get ready to receive lots of pats on the back!
