Gambero Rosso Carpaccio

This simple and elegant dish comes together in just a few easy steps, says Joe Gurrera, owner and original fishmonger at Citarella Gourmet of this red prawn dish from his book Joe Knows Fish. Set in a bed of microgreens it packs a health punch with pre-vitamin A and antioxidants, but health benefits aside, it just looks so pretty on the plate. 

Serves 2

Ingredients: 

  • 2 shrimp, peeled and deveined
  • Extra virgin olive oil to drizzle
  • Dash of sea salt
  • Microgreens, for garnish

Directions: 

  1. Rinse with cold water and pat dry with a clean towel.
  2. Place them between 2 sheets of plastic wrap and gently pound them until flattened.
  3. Transfer to a plate and drizzle with extra virgin olive oil and sea salt.
  4. Garnish with a whole shrimp and microgreens.
